Nuclease is a 5’-phosphodiesterase preparation produced from penicillium citrus strain, which is cultured and refined by the unique
fermentation process. Nucleases act on the phosphodiester bond between the 3’-carbon atoms of hydroxyl and phosphoric acid, which can hydrolyze RNA to 5'-nucleotides or flavoring nucleotides. As a quite important enzyme preparation, nuclease is often used to transform yeast extracts to natural enhancer and is widely used in the production of nucleotides.
