Working Mechanism:
The fungal alpha-amylase is an endo amylase. It hydrolyze the α -1,4-glucosidic linkages in amylose and amylopectin, producing many maltoses and little maltotriose, glucose and other oligosaccharides.
Properties:
1. Temperature : Effective Temperature Range : 35-65 ℃, Optimum 45-55 ℃. 2. pH: Effective range is 4.5-6.0 , optimum pH 4.8-5.5
Specification: 1. Liquid type: Appearance: brown liquid ,20000u/ml Solid type: Appearance : light yellow powder for food grades solid enzyme : 100000 u/g .
2. Unit definition: The amount of enzyme needed to hydrolyze the equivalents of 10mg reducing sugar from glucose at pH 5.0, 40±0.5℃ for 30 mins.

Application Guide:
1.In the maltose syrup processing, Fungal alpha amylase mainly used in slurry with maltose content<54%. The dosage is 0.1-0.35L/t dry basis , pH4.8-6.0, 58-60 ℃ for 6-30 hours.
2. In the beer industry , it can increase the fermentation degree, improve the residual sugar level and avoid cold muddy( chill haze ) in saccharification and fermentation stage. 0.1-0.3kg/t dry basis on saccharification stage can increase fermentation degree,0.002-0.004kg/t dry basis can avoid cold muddy(chill haze) ,0.02-0.1 g/t dry basis can improve the residual sugar level.
3. In the bread and steamed bread processing , the recommended dosage is 0.002-0.01 kg/t flour ( base on 100000 u/g ). it often blend with xylanase for best performance.
Package and storage
Plastic drum is used in liquid type, 25kg/drum , Plastic weave bag is used in solid type, 20kg/bag .Further package customizable. this product is organic biochemical substance, high temperature, strong acid & strong alkaline will cause inactivation of enzyme. So, avoid exposure to sunlight when being transported. Solid enzyme should avoid direct sunlight and rain. It should be kept in clean, cool and dry place, or you need to increase its dosage.
